Almond Apple Crisp

During our weekend in the mountains, we picked up a bunch of apples to bring home.  Actually, Mason picked them out and ate as many as he could on the way home…

Thankfully, he left enough for me to make Apple Crisp!  I found a great recipe from Delighted Momma and modified it slightly to make one amazing fall treat!  This is a paleo apple crisp that calls for some special ingredients so grab a pen, here is the list (or just print the recipe card at the end of the post!):

  • 6-7 apples (I used a mix of honey crisp and gala)
  • 1.5 cups of almond flour
  • 2 tbs of cinnamon
  • 3 tbs of melted honey
  • 4 tbs of melted coconut oil
  • sliced almonds (optional)
  • 3 tbs of maple syrup
  • pinch of salt
  • 4 tbs of coconut sugar (I found this at Whole Foods)
  • 1 big lemon

Preheat oven to 300*

Peel and core apples.  The peeling isn’t totally necessary but I thought Mason would enjoy it more without the skin.

Squeeze the lemon all over the sliced apples – covering as much as possible!

Set the apples aside and mix the topping!  Melt the coconut oil, honey and maple syrup together.  In a medium bowl, mix the melted ingredients with the almond flour, cinnamon and salt.  After everything is incorporated, spread the topping over the apples.  This didn’t “spread” very well for me so I just did what I could with a spatula and hoped for the best.  Before putting it in the oven, sprinkle the apples with the coconut sugar and add sliced almonds (optional).

Bake for an hour and BAM.  You’ve got a really good, healthy, irresistible breakfast/lunch/dinner/dessert meal.  It’s that good.

Chad pretty much ate the whole thing before I knew what happened.  I had my fair share too and Mason L-O-V-E-D it!  This recipe was great because it is super easy, quick and you really could have it for or with any meal.
